Soil: Argillaceous and argilo-calcareous
Face : South-east
Vinification: 10 days’ maceration at 28-30°C (82 - 86°F) with a peak of 34°C (93°F). Slow end to fermentation to favour the red fruit aromas of the Pinot Noir.
Ageing: After around 3 weeks’ fermentation, the wine is stored in tuns to begin its second fermentation.
Tasting notes : An often dark robe with aromas of fresh red fruits and firm tannins when young. More mature, it develops aromas of candied fruit.
Serving: 15-16°C (59 - 61°F) - Young, it may require decanting for 1 to 3 hours before drinking.
Keeping: between 4 and 8 years, depending on the cellar and the vintage
To accompany: perfect to accompany grilled meats or cheeses.
